I was really happy to learn that Healthy Choice now has vegan and vegetarian options! It’s a perfect size for lunch to go, making it easy to add a delicious Mediterranean flare to lunch at work. With crispy falafel, red onions and tomatoes on top of nutrient-rich whole grains and greens like quinoa, barley, and kale, topped with a creamy tahini sauce, you simply can’t go wrong.
I really loved the flavors in this Healthy Choices meal! It was so easy and delicious and perfect to bring to work with me for a simple plant-based lunch.
Birds Eye OvenRoaster™ Sheet Pan Vegetable Broccoli and Cauliflower
I may be a vegetarian, but I still have a hard time eating enough vegetables. I’m happy that I found Birds Eye OvenRoaster Sheet Pan Vegetables because they make it easy to have delicious, perfectly pre-seasoned and cooked roasted vegetables in less than a half-hour. They have no artificial preservatives or flavors and even my husband loved them!
Gardein Nashville Hot Chick’n Tenders
Eat Less Meat! Try this Summer Salad with Gardein Nashville Hot Chick’n Tenders and Tangy Mango Vinaigrette
- 1 Package Gardein Nashville Hot Chick'n Tenders
- Mixed greens
- 1 large tomato, sliced
- 1 avocado, sliced
- 2 mangoes (one sliced for salad, one for the dressing)
- green onions, chopped
- toasted pumpkin seeds
- 1 tablespoon olive oil
- 1 teaspoon apple cider vinegar
- 1 teaspoon sriracha
- salt and pepper to taste
- Tangy Mango Vinaigrette
- Spread the mixed greens on two large plates
- Arrange sliced tomatoes, mangoes, and avocado in a circle around the plate.
- Top with Gardein Nashville Hot Chick'n Tenders
- Add dressing
- Garnish with pumpkin seeds and green onions.
- For Tangy Mango Vinaigrette:
- Combine mango, olive oil, vinegar, sriracha, salt, and pepper in a blender. Blend until smooth.

I am definitely trying to eat less meat and with a vegan son, it’s much easier. However, he and I have had some heated discussions about the merits of meat substitutes vs eating meat! He’s very passionate about his choice to be vegan. It’s nice to see that his choice was made thoughtfully! I can respect that. I’m glad there are options for vegans like the ones you’ve shared here. As an athlete, he needs lots of protein!

Being vegan can be a process. Substitutes can make the process easier, and there is nothing wrong with them. I started by subbing out Gardein products for my regular recipes and it was just so easy. I still use a lot of those recipes. As your son goes along, he will learn what his best diet is. It is certainly possible to get enough protein on a plant-based diet, vegan athletes like Robert Cheek (bodybuilder), Rich Roll, and ME! prove that all the time.

They have so many options! They’re everywhere here these days, even Target and all of the supermarkets. Not sure about Iowa. They do have a location finder on their website at gardein.com
