Ingredients
  • 1 Package Gardein Nashville Hot Chick'n Tenders
  • Mixed greens
  • 1 large tomato, sliced
  • 1 avocado, sliced
  • 2 mangoes (one sliced for salad, one for the dressing)
  • green onions, chopped
  • toasted pumpkin seeds
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sriracha
  • salt and pepper to taste
  • Tangy Mango Vinaigrette
Instructions
  1. Spread the mixed greens on two large plates
  2. Arrange sliced tomatoes, mangoes, and avocado in a circle around the plate.
  3. Top with Gardein Nashville Hot Chick'n Tenders
  4. Add dressing
  5. Garnish with pumpkin seeds and green onions.
  6. For Tangy Mango Vinaigrette:
  7. Combine mango, olive oil, vinegar, sriracha, salt, and pepper in a blender. Blend until smooth.
