Burritos are my favorite food group! Okay, well burritos may not be an actual food group, but this All in One Vegan Burrito contains most of the real food groups. It really is a protein-packed meal in a tortilla! It’s a perfect addition to any Cinco de Mayo celebration!
One cool thing about the All in One Vegan Burrito is that you can use your favorite protein! While I used seitan, you can easily substitute tofu, vegan chicken, tempeh, or even skip them all since the beans provide plenty of protein all on their own! You can also use jackfruit, which makes a delicious alternative to faux meat. If you avoid gluten, use a gluten-free tortilla and avoid the proteins made with wheat. And, Bowl lovers? Yes, you can skip the tortilla altogether!
All In One Vegan Burrito ~ Protein-Packed Meal in a Tortilla
I call this the All in One Vegan Burrito because everything is packed in there. Vegan protein, carbohydrates, and healthy fats are all accounted for with beans, avocado, mushrooms, tomatoes, peppers, and other veggies making this burrito a full meal in a tortilla.
Feel free to add your own favorite veggies to the All in One Vegan Burrito! I have tried sneaking in spinach, zucchini, and even cauliflower (shhh! don’t tell my husband!) with great success.
- One 8 oz package of seitan or one cup vegan protein of your choice, cut into bite-sized pieces.
- 1 lime
- ½ cup medium sized white mushrooms, quartered
- ½ onion chopped and divided
- 1-2 teaspoon Serrano or Jalapeno pepper, minced (to taste for spiciness)
- 2-3 cloves garlic, minced
- 1 teaspoon salt
- 1 medium potato, peeled and chopped
- 1 cup pre-made hot salsa (use milder if you prefer)
- ½ cup water
- 1 tablespoon oil
- 1 can pinto or black beans, rinsed and drained
- Spicy tomato and cilantro salsa (see below)
- 1 avocado, sliced
- Tortillas
- In a small bowl, combine the seitan or other vegan protein, lime juice, and salt. Set aside while you make the tomato and cilantro salsa.
- Preheat olive oil in a skillet over medium heat.
- Add the garlic, onions, and chili.
- Cook for several minutes until the onions soften.
- Add the seitan/protein mixture and potatoes. Cook until lightly browned, stirring frequently.
- Add the mushrooms and stir together.
- Add the pre-made salsa and the water. Increase the temperature to medium-high and bring to a low boil, stirring constantly.
- Stir in the beans.
- Reduce the heat to low and simmer until most of the liquid has evaporated (about 10 minutes).
- Heat tortillas. Fill a tortilla with seitan mixture, tomato and cilantro salsa, and avocado and roll into a burrito. Enjoy!
- Other filling options include rice, vegan cheese, hot sauce.
Spicy Tomato and Cilantro Salsa
2 medium tomatoes, chopped
1/2 onion, chopped
1 or 2 serrano chilis, seeded and chopped
1/2 cup cilantro, lightly chopped
Combine all the ingredients.

Haven’t had burritos, or Mexican food in general, much since before I was pregnant and they use to be a staple. Making them this week and may have to try adding mushrooms, never tried that.
