All In One Vegan Burrito

Ingredients
  • One 8 oz package of seitan or one cup vegan protein of your choice, cut into bite-sized pieces.
  • 1 lime
  • ½ cup medium sized white mushrooms, quartered
  • ½ onion chopped and divided
  • 1-2 teaspoon Serrano or Jalapeno pepper, minced (to taste for spiciness)
  • 2-3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 medium potato, peeled and chopped
  • 1 cup pre-made hot salsa (use milder if you prefer)
  • ½ cup water
  • 1 tablespoon oil
  • 1 can pinto or black beans, rinsed and drained
  • Spicy tomato and cilantro salsa (see below)
  • 1 avocado, sliced
  • Tortillas
Instructions
  1. In a small bowl, combine the seitan or other vegan protein, lime juice, and salt. Set aside while you make the tomato and cilantro salsa.
  2. Preheat olive oil in a skillet over medium heat.
  3. Add the garlic, onions, and chili.
  4. Cook for several minutes until the onions soften.
  5. Add the seitan/protein mixture and potatoes. Cook until lightly browned, stirring frequently.
  6. Add the mushrooms and stir together.
  7. Add the pre-made salsa and the water. Increase the temperature to medium-high and bring to a low boil, stirring constantly.
  8. Stir in the beans.
  9. Reduce the heat to low and simmer until most of the liquid has evaporated (about 10 minutes).
  10. Heat tortillas. Fill a tortilla with seitan mixture, tomato and cilantro salsa, and avocado and roll into a burrito. Enjoy!
  11. Other filling options include rice, vegan cheese, hot sauce.
