I’ve been feeling so busy lately, but after my friend, Christina made pineapple salsa when I was staying with her, I knew that I needed to make my own version as soon as possible. Not being vegan, she served it with simple pork tacos, but fortunately, thanks to Gardein, this was easy to recreate in a more humane fashion.

Simple Vegan Tacos with Pineapple Salsa
While I was visiting Christina, I simply cooked up the Porkless Bites (discarding the sweet & sour sauce that comes with it) while she prepared her own version. The rest of the meal was naturally vegan. At home, I used the Beefless Tips. They both were delicious!
For the refried beans, I usually start with a can of pinto or black beans and cook them up myself. You can also start with dried beans from scratch or purchase a can of vegetarian refried beans.
I think you’ll enjoy these simple vegan tacos with Pineapple Salsa. They are so easy to prepare and have a fresh sweet and spicy flavor that will be sure to love.
- 1 cup fresh pineapple, in chunks
- 1 large tomato, chopped
- ½ cup onion, chopped
- 1 Jalapeno or Serrano pepper, minced
- 2 tablespoons cilantro, chopped
- 1 tablespoon lime juice
- Salt & Pepper to taste
- 1 tablespoon olive or avocado oil
- 1 package Gardein Porkless Bites or Beefless Tips
- Vegan refried beans
- Corn Tortillas
- Avocado
- Combine all the ingredients in a bowl and set aside.
- Preheat oil in a small frying pan over medium heat.
- Cook the Porkless Bites or Beefless Tips until they are browned.
- Make or heat refried beans
- Heat tortillas
- On each tortilla place a large spoon of beans, several pieces of Porkless Bites or Beefless Tips, avocado, and Pineapple Salsa
