Happy Cinco de Mayo! Well, it’s actually Star Wars Day, which gives you an extra day to plan your Cinco de Mayo celebration meal. It’s weird that the one time that Cinco de Mayo actually falls on Taco Tuesday most of us are stuck at home with no place to go. Tempeh is made from fermented soybeans and is a great way to add soy protein plus the benefits of fermented food to add good bacteria to your diet. It’s generally gluten-free, but you should check because that is not always the case. This Tempeh Taco Salad is easy to make and is loaded with nutrients from the fresh veggies as well as the tempeh.

Yes, I’m vegan and still love cheese (the vegan version!)! Quesadillas are delicious and these Quick and Easy Vegan Quesadillas not only have vegan cheese, but they also have plant-based ground “beef” and a little bit of spice (or a lot if you’d like)

Simple Vegan Tacos with Pineapple Salsa
I first made these Simple Vegan Tacos with Pineapple Salsa after spending a race weekend with my friend Christina a couple of years ago. While she is not vegan and made her version with pork, it was super easy to adapt. The pineapple salsa really makes this dish and you can use your choice of plant-based pork, beef, or chicken as well as less processed choices like tofu or jackfruit. They are all delicious.

Okay, i’ve bookmarked the recipe for tempeh tacos with mango salsa- it sounds amazing. I’ve already planned our cinco de mayo tacos, and I’m making a copycat recipe of the Chipotle tofu sofritas. But I love tempeh so I will make these next Tuesday- thanks!
