You may have noticed that I’m a little obsessive about burritos. If I’m not making them, I’m ordering them. Vegan burritos, of course. Tonight, I started with my Tofu, potato and mushroom burrito recipe, substituted seitan, and added zucchini. Served with rice, I have enough leftovers for lunch tomorrow and dinner again in a couple days.
I could live on tofu scramble burritos for breakfast, beans and rice burritos for lunch, and this burrito for dinner.
