Vegan Meatloaf with Beyond Beef: Plant-Based Comfort Food
1 lb Beyond Beef vegan ground beef ½ cup black beans 6 tablespoons black bean aquafaba (the liquid from the beans) 1 tomato ½ cup onion, chopped fine 1 tablespoon celery, chopped fine ⅔ cup vegan bread crumbs (I used Trader Joe's) 1 tablespoon soy sauce (use tamari or liquid aminos for soy/gluten-free) 1 tablespoon dijon mustard Salt/Pepper For the Glaze: 2 teaspoons dijon mustard 1 teaspoon maple syrup 1 teaspoon Sriracha Preheat oven to 350 Measure off 6 tablespoons of the aquafaba and set aside. In a blender or food processor blend the beans and tomato until smooth In a large bowl, combine the onions, celery, bread crumbs, soy sauce, mustard, salt, and pepper. Mix in the Beyond Beef. Add the black bean mixture and aquafaba and blend in. Place mixture into a loaf pan and cook at 350 for an hour. Remove from the oven. Mix the mustard maple and sriracha and spread on top of the loaf. Cook for about 10 more minutes. Remove from the oven and let rest for 10 minutes.
