Creamy Jackfruit Stew with Potatoes and White Beans. Vegan and Gluten-Free

Ingredients
  • One can young jackfruit in brine
  • 1 tablespoon oil
  • ½ cup onion, chopped
  • 2-3 cloves garlic, minced
  • 1 potato, peeled and chopped
  • ½ cup red pepper, chopped
  • ½ cup carrots, chopped
  • ½ cup mushrooms, chopped
  • ½ cup zucchini
  • 2 cups vegetable broth
  • 1 cup non-dairy milk
  • 1 can white beans, rinsed and drained
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cayenne pepper
Instructions
  1. Heat oil in a large fry pan over medium heat.
  2. Add onions, garlic, red peppers, and potatoes, and cook until the onion is soft.
  3. Add jackfruit, pulling it apart as you add it.
  4. Cook for about 5 minutes, continuing to break the jackfruit apart.
  5. Add the carrots and mushrooms and cook for 2 more minutes.
  6. Add the vegetable broth and non-dairy milk. Increase heat to medium-high and bring to a low boil.
  7. Add the white beans. Return to a boil, then reduce heat to simmer.
  8. Simmer for 15-30 minutes, allowing sauce to thicken.
  9. Add zucchini, salt, pepper, and cayenne.
  10. Simmer for 10 more minutes.
  11. Remove from heat and let sit for 5 minutes before serving.
Notes
Use your favorite veggies but subbing out in similar quantities.
