Vegan Mushroom Gravy

Serves: 4 cups
- 3 cups vegetable broth
- 1 cup water
- ½ cup mushrooms chopped
- ½ onion chopped
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 tablespoon soy sauce
- ½ cup flour
- Preheat the oil over medium heat in a large saucepan. Add the onion and sauté until soft. Add the mushrooms and cook for 5 more minutes. Add the flour slowly, stirring to form a roux. Add the broth, water, garlic powder, nutritional yeast, and soy sauce. Bring to a boil, stirring constantly, then reduce heat to low. Simmer until the gravy is thickened. Strain and serve.
