Tempeh Pasta Sauce

Ingredients
  • 1 package (8 ounces) tempeh
  • 1 medium onion, chopped
  • 6 cloves garlic minced
  • ½ yellow pepper, chopped
  • 2 tablespoons olive oil
  • 1 can chopped tomatoes with liquid
  • 1 can tomato sauce
  • ½ cup red wine
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt
  • ½ cup mushrooms, sliced
  • Cooked pasta of choice.
Instructions
  1. Preheat the olive oil over medium high heat. Add garlic, onions, and yellow pepper. Cook for about 5 minutes, until soft.
  2. Crumble the tempeh and add to the pan. Continue to cook and stir until the tempeh is lightly browned.
  3. Stir in the seasonings and cook for two more minutes.
  4. Add the tomatoes, tomato sauce, and the red wine. Bring to a low boil.
  5. Add the mushroom. Cook for two minutes then reduce the heat and simmer until the liquid is reduced and the sauce is thick.
  6. Serve over the pasta of your choice.
