Pumpkin Maple Blondies. Vegan and Gluten Free

Ingredients
  • 2¼ cups gluten-free flour
  • 2 teaspoons baking powder (make sure it's gluten free. Not all are.)
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Pinch of salt
  • ½ cup vegan butter
  • ¼ cup sunflower oil
  • 1 cup brown sugar
  • 1 cup canned pumpkin
  • ¼ cup maple syrup
  • 6 tablespoons Aquafaba (bean liquid)
Instructions
  1. Preheat oven to 350.
  2. In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the vegan butter, oil, brown sugar, pumpkin, and maple syrup.
  4. Slowly blend in the Aquafaba.
  5. Slowly add the liquid ingredients into the flour mixture. Blend until just smooth.
  6. Pour into a greased baking pan.
  7. Bake 25-30 minutes until a toothpick comes out clean.
  8. Allow to cool, then cut into squares.
