#MNBChallenge: Week Two. Delicious

We just wrapped up week two of Lorna Jane’s Move Nourish Believe Challenge! Based on Lorna’s  philosophy to MOVE her body every day, NOURISH from the inside out, and BELIEVE in herself and that anything is possible if you work hard enough, each week brings a different theme, each day a different challenge.  This week the challenge was to focus on Nourishment. (Last week was Move!) And the prize is $1000 in Lorna Jane Active apparel!

In some ways, this week was very easy. I mean, Meatless Monday? Everyday is Meatless Monday in my world. But then, around Wednesday, I felt a cold coming on and my inspiration slipped a little as my cough got worse. A migraine that kept me up all night on Thursday didn’t help either. But, I decided that I could manage to stick with the challenge by keeping it simple. It was all still nourishing.

Day 1: Go Meatless! Skip Meat Today. Try Vegetarian/Vegan Meals

Meatless MondayThis is actually food from a couple days. All of it so delicious that I needed to share it for Meatless Monday. From the top left: The Bombastic Tofu Wrap from Native Foods, my own Buffalo Tofu Wings, a Veggie Bowl from Chipotle (they finally took the bacon out of the pinto beans..score!), and my Roasted Asparagus and Seitan Salad. Who needs meat?

Day 2: Take Your Lunch to Work!

Bring Your LunchI frequently bring leftovers to work, but I decided to step it up a bit for this challenge. I did start with some leftover seasoned seitan, but I brought all the sandwich goodies with me and built this amazing sandwich.

Day 3: Write it Down! Journal Your Food Today and Share Your WIAW With Us

WIAWThis was fun! I don’t usually play along with What I Ate Wednesday, so it was a first for me. I think it’s a good idea to take a look at what you’re eating once in a while. Serving sizes tend to sneak up on me, so writing it down can be enlightening. On this particular day, I started as always with my coffee and vitamins. Breakfast is almost always cereal with toast. Mid-morning snacks can vary, but this day I enjoyed one of the Go Picnic snacks that I keep for just that purpose. Yes, I ate the whole snack. Lunch was an Addictive Sweet Potato Burrito from Julie’s Vegan Kitchen. I must have been in a Mexican mood, because dinner was a tofu and soyrizo scramble served with beans and tortillas. And a glass of wine. Of course.

Day 4: Smoothie Day! Make a Healthy Smoothie Today.

ZolaI keep a mini blender at work, which is perfect for mixing up my mid-morning smoothies. For this one, I started with a banana (always), added some Zola Acai Juice with blueberry, blueberry coconut milk yogurt, frozen berries, and a little ginger.

Day 5: Go Raw Friday.

RawFor raw Friday, I picked the only raw dish that I make regularly (aside from salads). This Pesto with Zucchini “Pasta” is delicious and easy.

Next week were working on Believe. I think this will be my favorite part of the challenge. For Monday: Spoil Yourself! Do something just for you today. I think it may be time to schedule a massage. What do you think?

    Oh wow. All of your food looks DELICIOUS! Right now I am going through chemo, so any little thing I can manage to eat I eat (I am currently living off of small portions of plain baked potatoes). But when I am done with chemo and on the mend, there is a food revolution coming in my home. There’s going to be some arguments, and some haters. But I will learn how to cook tofu, I will get those meatless Mondays in, and I WILL eliminate the processed crap from my home :)

    I’m also hoping (hoping hoping) to get healthy enough to participate in a Warrior Dash this September in my area. A lofty goal given I have no idea when chemo will be done this time around. But this looks like a very inspirational site, so you may see me on here often!
